Reflections on 2021

 

I started drafting this a few weeks back before we’d even heard the word ‘Omicron’. How quickly things can change; here we are again on the eve of Christmas, slightly uneasy about things to come. But if there is one thing this year has taught us, it’s that with the right people by our side, we can keep going and make great things happen.

Running a small business is intense (to put it mildly) and it’s easy to forget how much has been achieved. But there were some big highlights for us this year:

 

 

 

Back in March, we launched two beautiful, all natural, low sugar G&Ts-in-a-can back which have been very well received across the land.

 

 

 

 

 

It’s been a transformational year for One Gin listings, with some iconic new customers. We’re particularly delighted to now be stocked in Majestic and in John Lewis nationwide, be house pour in Incognito Bars and premium pour in Hippo Inns. 

This Christmas saw the launch of our new bespoke One Gin glasses and our lovely gift sets and boxes inspired by the countries we support.

 

 

But once again, what made this year was people who supported our small brand from near and afar. 

 

 

Our team may be small, but it’s unstoppable. We genuinely believe we can conquer the world with Duncan, Esther, Vanessa, George and Michael and the wonderful Saint team at our sides (and not forgetting the one and only Johnny Hunter who will always be part of our family).

2022 is going to be a game-changing year for The Spirit Of One. Watch this space as there are a few big announcements in the pipeline which we’ve been beavering away on for the last few months.

In the meantime, I’d like to raise a glass to all of you, wherever you are and whatever you’re doing this Christmas – May you be with the people that matter most and enjoy a few days of safe, healthy R&R.

Background

This very special gin was born out of the belief – and our customers’ expectations – that exceptional quality and doing good can work hand-in-hand. One Gin is the ‘full package’; it combines award-winning liquid, a widely acclaimed art deco label design and a minimum of 10% of profits donated to fund clean water projects.

The Role

This role is fundamental to our growth and you will be reporting to our sales director to implement our sales strategy in a highly commercial way through outstanding customer engagement.

Key Purpose
To maximise availability, visibility and ROS to targeted customers in the on- and off-trade. More specifically,
you will:
– Build relationships and maximise rate of sale with our existing customers – key on-trade, routes to market, key retail customers and specialist and targeted independents within London and southeast.
– Identify and secure new customer listings with a focus on the on-trade, specialists and independents in our heartland Richmond, surrounding areas + central London
– Participate in delivering staff training & tastings and other on-site activations
– Work closely with the marketing team to activate relationships and propose innovative collaborations
– Ensure the rest of the team are always fully aware of new and upcoming opportunities
– Support customer, consumer and trade events (sometimes after hours or at weekends)
– Continually develop insightful, relevant knowledge and trends in the drinks industry
We see this person as someone who will grow with the business and be instrumental to a growing a sales team over the next year.

About You

Ultimately, you are results orientated, think commercially, you’re a great relationship builder and brand

– At least two years’ account management experience in leisure / consumer focused company
– Previous industry experience either sales or on-trade bar background
– Strong negotiation/influencing skills
– Creativity and imaginative in approaching all relationships and challenges,
– The ability to manage multiple projects for different clients/stakeholders concurrently, both internally and externally
– High energy – A self-starter as well as a true team player who thinks big picture as well as running the day to day
– Excellent communication skills, both verbal and written
– Strong prioritising, planning and organisational skills

– An exceptional ‘Can Do’ attitude and ability to overcome obstacles
– A UK full clean driving license

All things Apples with One Gin…

Apple month is one of our favourite times of the year as this very special fruit holds a dear place in our heart. That’s because the perfect garnish for our  G&T is a couple of fresh, crisp apple slices (and a sage leaf when in season). We loved this so much that we decided to put the apples into the gin for our second expression;  our Sage & Apple Gin uses the oil from the pip of Russet Apples for a crisp, orchard fresh finish.

We are so excited about Apple Month that we’ve decided to have some fun with it and create some delicious, exciting recipes that all incorporate our award-winning gin and British apples.

 

One Gin Chutney

 

 

Ingredients:

3 red onions

3 cloves of garlic

300g dark muscovado sugar

50ml One Gin

200ml red wine vinegar

3 tablespoons balsamic vinegar

1 teaspoon wholegrain mustard

¼ teaspoon crushed chillies

 

Method: 

Thinly slice 3 red onions, and place in a pan on a low heat. Dice 3 cloves of garlic and once the onions have softened add to the pan along with 300g of dark muscovado sugar, 200ml red wine vinegar, 3 tablespoons of balsamic vinegar and one spoon wholegrain mustard. 

Cook for a further 5 minutes on a medium heat until sugar has dissolved, finally add 50ml One Sage Gin and a ¼ teaspoon of crushed chillis and then simmer for 30-40 minutes or until the chutney has reduced & thickened to a dark brown caramel colour.

Serve this delicious chutney with pork burgers garnished with apple and cheese slices and a rocket salad. Or try on a cheese board after dinner one night with sliced apple and grapes.

 

Sticky Toffee Apple Pudding

 

 

Ingredients – caramel sauce

50g butter

100g granulated sugar

1 teaspoon cinnamon

1 teaspoon water

Ingredients – cake

125g butter

225g self-raising flour

140g caster sugar

3 egg yolks (save the whites!)

8 tablespoons milk

6 apples peeled & thinly slices

1 teaspoon vanilla extract

1 lemon

Ingredients – sticky toffee sauce

15ml One Gin Sage & Apple

300g light muscovado sugar

150g butter

225ml double cream

1 tablespoon black treacle

 

Method:

1) Start by peeling, coring and thinly slicing your apples, cover in lemon juice to stop them turning brown.

2) For the caramel sauce add your butter to a pan and melt, then add your sugar and a teaspoon of water and wait until it has dissolved. Finally add a teaspoon of cinnamon and stir until well mixed and the mixture starts to bubble.

3) Pour your caramel sauce into the base of a well greased baking tray (we used a 24cm circular tin) and place your apple slices in a spiral pattern.

4) For the cake, start by creaming your butter and sugar together, then add your 3 egg yolks and a teaspoon of vanilla extract. Next add your flour, we added this in 3 parts adding a few dashes of milk in between each time until well combined. Finally, remember those egg whites we asked you to save? Whip those babies until light and fluffy and then fold into your cake batter, being careful not to over mix.

5) Pour your batter into your greased cake tin on top of your gorgeous apple spiral pattern and place in a preheated oven at 180 degrees for 45 minutes or until a knife comes cleanly out of the sponge.

6) Now on to the sticky toffee sauce, in a small saucepan on a low heat melt your butter, sugar and a tablespoon of black treacle (do not lick the spoon, it smells sweeter than it tastes). Once well combined add 20ml of One Gin Sage & Apple and 225ml of double cream and turn up the heat, once bubbling remove from the hob and leave to cool.

7) Time for the fun bit, place a board or large plate on top of your cake tin and flip, gently remove the tin and voila, your apple masterpiece should be all golden and delicious waiting for you. Prick a few holes throughout the cake and pour your delicious sticky toffee sauce on top and you’re ready to serve. Enjoy!

 

One Gin Toffee Apples

 

Ingredients 

15ml One Gin Sage & Apple

300g light muscovado sugar

150g butter

225ml double cream

1 tablespoon black treacle

6 apples

6 popsicle sticks

200g crushed walnuts

100s and 1000s sprinkles

 

Method 

  1. Start by washing your apples and twisting off the stalks. Pat dry your apples and using a sharp knife score a cross into the top of each apple. Finally push in your popsicle stick into the cross and place your apples to the side.
  2. On a low heat melt your butter, sugar and a tablespoon of black treacle in a small saucepan. Once well combined add 20ml of One Gin Sage & Apple and 225ml of double cream and turn up the heat, once bubbling remove from the hob and leave to cool.
  3. Transfer your sticky toffee sauce into a large bowl, place your crushed walnuts on a small plate and sprinkles on a small plate.
  4. Now for the fun bit, dip your apples into the sauce and then into your chosen topping, we’ve recommended sprinkles or nuts but you can get creative, why not try popcorn or smarties or even leave them plain?
  5. Place the apples in the fridge for 1-2 hours to set and enjoy!

Summer may be over but every cloud has a silver lining…Apple Month is here! 

What is Apple Month?

This annual celebration of apples and orchards has evolved from World Apple Day, traditionally held on the 21st of October; events are held across the country, ranging from apple games in public gardens to village fairs with cookery demonstrations, juice and cider, and the sale of many hundreds of apple varieties. 

 

Apples and One Gin

Apples and One Gin

To celebrate, we have created some exciting cocktails, one of our favourites is the Apple Spritz. What is there not to like !?

 

Apple Spritz

Ingredients:

37.5ml of One Sage & Apple Gin

20ml Cloudy Apple Juice 

25ml Lime Juice 

25ml Manzana Verde 

50ml Prosecco/ Sparkling Wine 

Recipe: 

Shake all the ingredients in a shaker filled with ice and strain into a vintage wine glass filled with ice. Top with prosecco and garnish with an apple fan and a dusting of cinnamon powder.

Our Apple Celebrations

Over the next month, to celebrate apple month we will be sharing with you some delicious recipes, weird and wonderful facts on all things apples, exciting giveaways and some truly gorgeous cocktails. Come and see us at markets and events in the coming month – We’ll be at the Duck Pond Markets in Chiswick and Gunnersbury most weekends and on Sunday the 3rd of October, we are off to Fulham Palace for more Appley-ness and celebrations in the orchard. Live music, beekeeping and woodturning demonstrations, a hotly anticipated baking competition, storytelling and more are on the cards .

Get the BBQ started with One Gin

The sun is finally here and is set to stay for the end of Summer (we hope).

Time to bring out the BBQ, and get your oven glove on and tongs at the ready.
We may not be going far this weekend but life can be beautiful at home too with friends, delicious food and refreshing drinks.

 

This summer we are working closely with some great brands, like Olly’s Olives, Divine
Chocolate, Hattingley Valley and Cawston Press. To create fun and exciting cocktails and
some delicious food partnerships. These recipes are guaranteed to wow your guests and
leave them wanting more. We have everything from Gin Soaked Prawns and Olive Salad
to Champagne Raspberry Posset. Read on !

 

 

Gin Salsa

  • 1 avocado, stoned, peeled and diced
  • 1 under-ripe mango, stoned, peeled and diced
  • 2 spring onions, finely chopped
  • 2 large tomatoes, deseeded and finely chopped
  • juice of ½ a lime
  • 1 tbsp gin
  • ½ x 31g pack coriander, roughly chopped

Finely chop all ingredients and add to a bowl, add tbsp gin and combine well. Finish with a few fresh stalks of coriander and a bowl of tortilla chips.

 

Gin Soaked Prawns

  • 24 fresh prawns
  • 3 cloves of garlic
  • 1 fresh red chilli
  • a few sprigs of fresh flat-leaf parsley
  • 50 ml olive oil , ideally Spanish
  • ½ teaspoon smoked paprika
  • 1 lemon
  • 1 tbsp gin

Chop all ingredients (except prawns) and mix well in a large mixing bowl. Toss the prawns in mixture until evenly covered and refrigerate for at least 15 mins. Thread the prawns on bamboo or metal skewers and grill on each side for 2 minutes or until cooked through. Season with salt and pepper and slide on top of salad.

Salad – Romaine lettuce, spinach, cherry tomatoes, cucumber, avocado, red onion and Olly’s Ollys Chilli & Rosemary olives

 

 

Strawberry Celebration Cocktail

  • 4 large strawberries (1 to garnish)
  • 30ml lemon juice
  • 3 bar spoons of sugar or 15ml sugar syrup
  • 90ml One Sage & Apple Gin
  • 150ml fizz

Muddle strawberries, sugar and lemon juice in the bottom of a shaker, add gin and shake with ice. Fine strain into 2 flutes or coupes and top with bubbles. cut your spare strawberry into some fun shapes and garnish.

 

 

Raspberry Posset

  • 140g frozen raspberries, defrosted or you can use fresh
  • 2 tbsp champagne our favourite is Hattingley Valley Classic Reserve
  • 200ml double cream
  • 4 tbsp golden caster sugar
  • 2 tsp freeze-dried raspberry pieces
  • shortbread biscuits , to serve

Put the raspberries and fizz in a mini food processor or blender and blend until the purée is as smooth as you can get it. Fine strain this mixture through a strainer, disposing of as many of the seeds as you can.

Put the cream and sugar in a saucepan and heat gently until the sugar and cream are combined. Increase the heat until just boiling, then keep boiling for 2 1/2 mins, stirring continuously.  Turn off the heat and stir in the raspberry fizz purée. Cool for 15 mins before dividing between 2 small pots or glasses. Chill for 30 mins and then remove form the fridge to place some fresh raspberries on the top the and chill for at least 2 hrs until set or if you have the time, over night to make sure they are set to perfect.

 

You’re all set – A delicious starter, a zingy cocktail and indulgent dessert. Just throw those burgers on the grill and you’re ready to go!
