Summer Sipping Sorted with One Gin!

Summer has well and truly arrived and it’s elderflower season. Follow our step by step guide to forage your own and have a go at making our delicious One Gin Butterfly Fizz.

Elderflower foraging

We know that elderflower season was a few months ago (mid-May to June) when the Elder trees flower and is the best time to go and collect them as they still have most of their pollen but we thought we’d include a little foraging guide

Wear clothes that you don’t mind getting dirty and make sure you have long sleeves and trousers on as Elder trees (where we get the Elderflowers from) tend to be surrounded by stinging nettles!

Collect the Elderflowers on a sunny morning before it gets too hot. They are found all over the UK and are generally white (although you can sometimes find amazing purple ones). If you still aren’t sure by the look, the smell is a dead giveaway! Choose trees that are as far away from a road as possible as they will be less exposed to pollution from traffic. Try to avoid over harvesting the one tree too much as the insects and birds need them too. When collecting, just snip them at the base of the bushy bit and try to avoid getting any leaves in with it.

 

Elderflower Cordial

Ingredients;

40 Elderflower heads

3 Litres of water

4 lemons

170g Citric Acid

5kg white sugar

 

In the biggest pot you have (or as many pots as you need) heat up the water until almost boiling and add in the sugar. Occasionally stir until all the sugar has dissolved. Once all the sugar has dissolved, bring to the boil and as soon as it has come to the boil take it off the heat and leave to cool slightly.

Rinse the Elderflower heads in some cold water to give them a bit of a clean and get rid of any creepy crawlies that might be on there. Add the heads to you sugar syrup (I had to transfer them into a larger container, but you can put them straight into the pot if you have enough space)

Zest the lemons and cut the rest into rounds and throw it all in there along with the citric acid and give it a good stir. Put the lid on it or cover it and leave it for 24 hours.

Strain the liquid through a muslin cloth or coffee filter (you can use a clean tea towel if you don’t have either of these) and divide the liquid into bottles or containers and store in the fridge for up to 6 weeks (It is also suitable for freezing in a plastic container).

If you aren’t able to collect your own elderflower to make this delicious cordial, not to worry, there are lots of easy alternatives that you can find at your local supermarket like Bottle Green Elderflower Cordial or Teisseire Fleur De Sureau Elderflower. Perfect for making our delicious cocktail of the month, the One Gin Butterfly Fizz.

 

One gin butterfly fizz

This cocktail is a perfectly refreshing long cold drink to have in the garden with friends. It makes a great pitcher also, just use 4x the ingredients. 

Ingredients

50ml One Gin Crisp Apple

20ml Homemade Elderflower Cordial

15ml lemon juice

2 slices of Cucumber (cut into strips)

6 mint leaves

top with soda (or pressed apple juice if you’d prefer)

Method

Give the mint leaves a bit of a rub to release aromas, and drop into a highball glass.

Add the rest of the ingredients apart from the soda water.

Fill the glass almost to the top with crushed ice (you can easily make crushed ice by bashing some cubed ice up in a tea towel with a rolling pin) and churn it all together with a long spoon so the ingredients are evenly spread out throughout the drink.

Fill the glass up to the top with more crushed ice (the more the better as it keeps the drink cold and stops it from watering down too quickly)

Top with soda (or pressed apple juice if you prefer) and garnish with a cucumber slice and a mint sprig (gently brush the mint sprig on your hand to release the aromas) and drink with a straw (not plastic of course!)

We are looking for a gin loving, creative and energetic event coordinator to join our team and run events and customer activation. 

This person will play a fundamental role in the business as the ‘’voice’ for the brand in events and will report directly to our Commercial Director Johnny who comes with years of experience at Pernod Ricard.

We are all about developing our people, though this role is part-time there is the opportunity to develop and if you have a real passion for cocktail making or recipe development for example we can look to work it into the role in future.

Your responsibilities

  • Running events on a weekly basis, from weekend markets, to gin tastings and cocktail masterclasses
    • Selling at local markets
    • Assisting at trade shows, festivals and pop-up events
    • Becoming a fount of knowledge on gin
  • Supporting the marketing team with content creation from events
    • Being a true ambassador to the brand
    • Capturing great moments at events / great content to post

 

About you

  • People person – ability to build strong relationships and work as part of a team
  • Superb Communicator – confident and bubbly, you’re out-going and love to chat
  • Flexible – happy to muck in and get involved with all things “One Gin”
  • Gin lover! – there will be plenty of samples and tasting sessions
  • Based in South West London
  • Full, clean driving license with own car

One Marvellous Jubilee Celebration

In honour of the Queen’s Jubilee and a very lovely long weekend, we have concocted a few delicious recipes – Perfect for a family BBQ or your local street party.

 

Jubilee Jellies

Inspired by the Queen’s favourite drink, a Gin & Dubonnet, (and some of our own favourites too) these sweet treats are the perfect pudding for the adults at your Jubilee celebration.

Ingredients

400ml Tonic Water

100ml One Gin Crisp Apple

300ml Water

300g Caster Sugar

36g Powdered Gelatine

2 x Lemons – zest & juice

50ml Dubonnet

50ml Elderflower Liqueur

50ml Peach Cordial

Recipe

  1. Heat the water in a saucepan until boiling and the sugar has melted. Add the lemon zest and rest for 15 minutes. 
  2. Strain out the mixture into a large mixing bowl and add the tonic, lemon juice and One Gin Crisp Apple.
  3. Add 300ml of the new mixture to a saucepan on a low heat and add the gelatine, stir until dissolved and add back to the mixing bowl.
  4. Separate out 325ml of the mixture into a separate jug and add 50ml Dubbonet. Repeat this step with the peach cordial and elderflower liqueur.
  5. Pour the mixture into greased mini jelly moulds, we used these and they were great for getting the jellies out in one piece!
  6. Chill overnight in the fridge. Serve with fresh berries and enjoy!

 

One Gin Peach Iced Tea

 

We Brits know that nothing beats a great cuppa but there are a million ways to enjoy tea and  here is a fresh festive one for the Jubilee.

Ingredients 

(serves 4-5)

600ml Earl Grey Tea

150ml One Gin Crisp Apple

50ml Peach Syrup*

50ml Lemon Juice

12 raspberries

1 peach

Glassware

Jam Jars or teacups

Recipe

  1. In a heatsafe jug, steep 2 Earl Grey teabags and the peel of 2 oranges in 600ml of boiling water for 2-3 minutes.
  2. Discard the orange peel and add the lemon juice and peach syrup to jug and transfer to the fridge to chill for 30 minutes.
  3. When ready to serve, add the gin and plenty of ice to the jug and serve in jam jars.
  4. To garnish, thinly slice the peach and feed one end onto a cocktail stick, then slide a full raspberry on and close in with the other end of the peach. Repeat this until the stick is full. Finish with a straw and enjoy!

 

One Gin & Dubonnet

Inspired by her Majesty’s favourite afternoon aperitif.

Ingredients 

37.5ml One Gin Classic

37.5ml Dubonnet

5ml Lemon Juice

Glassware

Rocks Glass

Recipe

  1. Add all ingredients to a rocks glass filled with ice and stir well
  2. Add more ice to top the glass as preferred
  3. Garnish with a lemon twist and enjoy!

Introducing the new One Gin ‘Butterfly’ Bottle

 

Background

Whilst we have always had compliments on our label / packaging, it’s been our dream to develop our very own bottle. In the premium spirits market, 50% of sales are for gifting and as such, the vessel and packaging is paramount. Brands like Mermaid Gin have transformed their business by launching a new bottle.

Our new bottle. What was the brief?

  1. To better communicate brand proposition using our butterfly effect metaphor 
  2. To reinforce premium credentials – The Tesco buyer felt our liquid was so beautiful and premium and the bottle didn’t do it justice
  3. To improve shelf presence & back-bar standout
  4. To improve sustainability
  5. To mitigate against glass supply issues

How is it more sustainable?

If this was only about sustainability, we would have created a bottle using the minimum amount of glass possible. But this would only tick point 4 of the above.

Answering the brief

By launching our new taller art deco bottle embossed/debossed with butterfly wings into the glass , we are

  • inextricably linking the bottle to the brand,
  • clearly reinforcing our proposition,
  • Upping our premium credentials
  • and improving standout

Looking at all element of the bottle with a sustainability lense

Manufacturer:  We selected Stoelzle, based in Lancashire,  as our manufacturing partner for the bottle, based on their sustainability credentials. In our opinion they are leading the way in carbon reduction and water management.

Labels : Paper made from recycled apple pulp (with a lovely link there for our apple gin)

Closure : Wood topped and natural cork

Designed for a second life / infinite re-use

We focused on using as little glass as possible within the constraints of the design brief above. And our bottle is below average weight for a premium 70cl spirits bottle. But we wanted to do more than that.

With only 50% of glass containers currently recycled in the drinks industry and 200,000 tonnes of glass going to landfill each year*, we turned our attention to re-use and second use.

As instructed by a little poem hidden on the bottle somewhere (we won’t say where…), when you remove the One Gin label after use, the bottle functions as a beautiful water carafe and begins a new life. We have debossed ‘WATER’ into the front of the bottle further reinforcing our brand purpose around clean water projects. There is no spirits bottle more appropriate to use as a water carafe.

This is tapping into a growing trend. We know that both the trade and consumers are increasingly turning to tap / filtered water;  premium spirits bottles are increasingly reused in hospitality as water carafes and sales of carafes and jugs in John Lewis & Partners were up 25% year to Sept 2021

5 Years, 5 Moments To Remember

Birthdays are always a good time to pause and reflect. The last five years building this brand have been such a roller coaster and whilst there have been a fair few tough, stressful days, the overwhelming feeling looking back is how exhilarating, fulfilling and plain fun it’s been so far. I say it to anyone who will hear this, but the best thing about this journey is the people (and particularly inspiring women) you meet along the way and the support you accumulate that make the rainy days OK in the end. 

I would do it all over again in a heartbeat (albeit with a few learnings second time around) and I can’t wait to see what the next five years hold in store.  

So, in no particular order, my top five moments so far…

1 The New one gin bottle

Seeing the new One Gin bottles come off the production line last week – To see blobs of fire turn into sculpted glass in a matter of seconds is simply mind boggling and gives us a new fascination for the complexity involved in producing such works of art. More on this very soon but thank you to our friends Paul and Sinead at SAINT, and the whole team at Stoelzle Glass for making this long standing dream turn into a very beautiful reality.

 

2 featuring on Saturday kitchen

Thanks to the wonderful Helen McGinn (@knackeredmother) for featuring us on BBC Saturday Kitchen, where Nish Kumar coined the phrase ‘BBC One Gin’ – perhaps one day! There’s something VERY exciting about being on TV…

 

3 creating our first limited edition

Turning a lockdown experiment into a much loved successful limited edition: our port barrel rested One Gin. Thanks Ian Spooner and Johnny Hunter – I know those weeks of tastings were tough on you. But I got my ‘pink’ gin in the end…

 

4 launching our sage & Apple gin with craft gin club

4. Raising £12k for The One Foundation with Craft Gin Club – whose members took a real shine to our second-born, Sage & Apple, and demonstrated great generosity by donating for our cause in the process. A perfect partnership in our eyes.

 

5 our first crowdfund

5. And a very recent one to finish…This week sees the end of our crowdfund round on Crowdcube – We have raised over £150k to launch a stunning new bottle and build out our sales team and we wanted to thank every single person who has invested and supported us. In celebration of International Women’s Day, we thought that we would invite you to get to know the ladies of the One Gin and One Water a bit better. Both businesses work together to support The One Foundation, who funds clean, sustainable water projects across Sub-Saharan Africa.

What’s your story?

I’ve been lucky to have the most amazing career so far – working for some iconic brands in advertising agencies, and currently in executive recruitment and meeting some outstanding marketing and comms talent in the process, and most recently embarking on this mad and amazing adventure with The Spirit of One. I just love having a portfolio career and using my brain in completely different ways for my two roles – Everyday is different, that’s for sure!

What female leader/s inspire you & why?

There are so many women that inspire me in my professional and personal life, and this for many reasons, but the one that stands out is my sister. She is the British ambassador to Great Britain in the Philippines (no less!) and has got there through sheer determination, sleepless nights and very hard work, getting out of her comfort zone in often very male dominated countries and teams. And whilst she has a huge, highly demanding job, she is incredibly humble about it and it hasn’t changed the hugely loving, and sometimes mad person she was 20 years ago. 

What piece of advice, as a female, would you give your younger self?

Things have thankfully changed a lot in the last 10 to 15 years. When I started my career, there was this real sense that you had to act like a man and ‘work hard, play hard’. I genuinely believe that men and women approach life and work in different ways and that’s a good, healthy thing, but my tip is ‘be proud to be a woman’, be proud to admit your failings, to be fragile sometimes, to be human….And to be a mum for that matter. We can be strong at times and need help at other times and I think it’s very powerful and aspirational to show this.

What’s you favourite cocktail and how do you make it?

My favourite drink in the world is the One Gin martini in Claridge’s. They keep the bottle at minus seventeen degrees – That extra cold gin is just delicious (…if a bit lethal. Only have one!) The setting isn’t bad either…

When you’re not making/selling gin/water, where will we find you?

My best and most important job is not one you’ll find on my LinkedIn profile. It’s to be a mum to our two girls. I am very away that time flies by quickly ; they are 8 and 10 and I do everything I can to live in the present with them. Which means free time at the moment is spent climbing trees, watching dance routines, doing Harry Potter quizzes and making dens!

Hello I’m Sarah and I’m the finance director at One Water. I’m a chartered accountant and in my personal life I’m a wife and mother to 2 teenagers.

What female leader/s inspire you?

All too often there can be a tendency for women to feel that they need to act like a man to be an effective leader; I think our Queen is a great example of a woman who seemingly never compromises her femininity in order to lead.

 

What piece of advice, as a female, would you give your younger self?

Have confidence in yourself and your abilities and don’t fall victim to impostor syndrome.

What’s your favourite cocktail and how do you make it?

A gin sling – mix One Gin sage with dash of lemon juice, angostura bitters tonic or soda with lots of ice of course.

Walking my labrador or cheering my kids on from the sidelines.

What’s your story?

Hiya, my name is Vanessa, I’m the Senior Marketing Manager here at One Gin and I’ve worked in hospitality and the drinks industry for the last 10 years. I started in pubs and restaurants in some of your favourites such as Pizza Express and Cote and moved on to join the fabulous team at Tipplesworth. We made delicious non-alcoholic cocktail mixers, I got to be involved in everything from NPD, label design, launch parties, account management, you name it, I did it. I joined the team at One Gin just under a year ago and I’m loving it, it’s great to be part of something that gives back.

What female leader/s inspire you?

I’d have to say, all the amazing female founders I’ve been lucky enough to work with such as Frankie Snobel, founder of Tipplesworth, Joyce & Raissa de Haas, founders of Double Dutch and the lovely Cecile, co-founder of One Gin. The drinks industry is pretty heavily male dominated and it’s been a great experience to work with so many determined and successful females.

What piece of advice, as a female, would you give your younger self?

‘Don’t worry so much’ in fact I have to remind myself some times even today, everything works out in the end and problem-solving is a great way to learn. Don’t be afraid to speak up and say what you think.

What’s your favourite cocktail & how do you make it?

Mine has to a Sbagliato, I’m a fiend for prosecco based cocktails and this is the perfect balance of fizz and bitterness with a dry finish. Simply add 30ml sweet vermouth, 30ml campari and 60ml of prosecco to a tall glass filled with ice (I tend to be a little bit more generous with the bubbles) and garnish with a thick slice of orange and voila!

When you’re not making/selling gin/water, where can we find you?

If there’s rugby on, you’ll find me sipping a glass of rose, dressed head to toe in green and cheering on Ireland until I’ve lost my voice but when there’s no six nations I love to bake in my free time, one of my favourite recipes is the Guinness Cake from The Humming Bird Bakery cook book, it’s insane!

What’s your story?

Hi, I’m Colette and I’m the Marketing and Social Media Executive at OneWater.This is my first job since leaving university where I studied French and History in Paris for 3 years!

What female leader/s inspire you?

It has to be Joanna Lumley, she’s such an icon! I respect how she uses her fame from being on screen to support worthy causes and to raise awareness of important environmental, social and human rights issues. She really inspires me to be an honest, giving person and to live life to the fullest.The quote from her that I live by is: “You only have one go at life, which is thrilling. Only you can make yourself into who you want to be. Don’t blame anybody else.You are entitled to free fresh air, and that’s it. Do the rest yourself.”

What piece of advice, as a female, would you give your younger self?

Definitely to just do what you love – all of my friends growing up had such clear career directions. Don’t overthink it and just pick the subjects that you enjoy the most at school and they won’t feel like work.You’ll find the path you’re supposed to be on

What’s your favourite cocktail & how do you make it?

My favourite cocktail has to be a Cosmopolitan! It’s so simple to make and so easy to drink! It’s literally just vodka, triple sec, cranberry juice and lime juice. My preference is having it garnished with orange peel and an edible flower if they’re going!

When you’re not making/selling gin/water, where can we find you?

I’d love to say the gym, but in reality, it’s probably cuddling with my cats watching TV and sipping a Cosmopolitan…! Or if it’s a school night, with an Oat milk tea..

What’s your story?

Sales Director (Part Time) for The Spirit of One. A career that started out in telesales for Rank Xerox in the early 90’s. (they were huge in their day) selling copier supplies, with a title of ‘Document Supplies Specialist,’ (fancy!) it set me up brilliantly for a life of sales. Along the way I became fascinated by psychology and people behaviours and in 2013, became a licensed practitioner for one of the big psychometrics businesses, and continue to ‘help people to help themselves by understanding people differences. I am also lucky enough to have spent the last, near on 20yrs, working with the quirkiest, convivial, most passionate, fun people in the world of hospitality.

What female leader/s inspire you?

Sara Blakely – Founder. Sara started her career selling fax machines door to door. She created the £1.2bn brand Spanx because something just wasn’t right with her tights! Powered by intuition, Sara a mum of 4, is a genuine ‘lead from the front’ funny lady who has set up a foundation that helps women through education and entrepreneurial training.

What piece of advice, as a female, would you give your younger self?

 ‘Take care of the pennies and the pounds will look after themselves!’ and ‘Delete unwanted items in your personal inbox as you go along!’

What’s your favourite cocktail & how do you make it?

It has to be a well crafted One Gin Sage and Apple Bramble. Best made by someone who loves their craft. I get too creative/adventurous when making cocktails at home, they’re great, but I can never make the same one twice.

When you’re not making/selling gin/water, where can we find you?

Outside! On my road bike, walking my 3 dogs, at a festival or just a good old pub garden!
